Confit is the result of very long and slow cooking in goose fat. This gives a goose confit with very tender and tasty flesh. Goose confit is a gourmet dish.

The goose confit is to be served grilled in the oven so that the skin is golden and crispy.

Tasting advice:

Release the confit from its fat after placing the box in a bain-marie for a few minutes. Reheat for 15 to 20 minutes in a traditional ovenproof dish (th.6). Grill for 5 minutes, skin on grill side.

Serve the goose confit with potatoes, porcini mushrooms, or green beans sautéed in duck fat with a parsley; or cold, cut into strips with a curly salad seasoned with walnut oil.

Je connaissais bien le confit de canard de mon epicerie fine de terroir. J'ai essayé le confit d'oie, c'est tres bon!
