  • 2 cloves of garlic
  • 1 bouquet garni
  • 2 cloves
  • 200g of flour
  • salt, pepper

Preparation of Old-fashioned Caen-style guts

  • Cut the tripe into squares of 5 cm on each side. Dice the foot pulpit. Keep the bones and put them in a square of knotted muslin.
