In general, use thyme in all Provencal cuisine (ratatouilles, Nice salads...). It is one of the ingredients of the famous bouquet garni. It has a lemony aftertaste which gives pep's and freshness to your kitchen.

Even if its use extends to all dishes, thyme goes perfectly with tomatoes (fresh, cooked, dried tomatoes, etc.), pan-fried vegetables, grilled meats and goat cheese.

Use it in all your slow-cooked dishes and marinades (fish marinades, white meats, or game).
