The Confit of goose from the Périgord, a real local product, 1 thigh

This goose confit was made according to my recipe, in an artisanal way. A real gourmet confit with soft and tasty flesh. One of the great gastronomic specialties of the Perigord. The confit is the result of a very long and slow cooking in goose fat. This results in a goose confit with very tender and tasty flesh. The goose confit is a gourmet dish. 

The goose confit is to be served toasted in the oven so that the skin is golden and very crispy.

Tasting tips :
Release the confit from its fat after placing the tin in a water bath for a few minutes. Reheat for 15 to 20 minutes in a traditional ovenproof dish (th.6). Grill for 5 minutes, skin on grill side.
Serve the goose confit with potatoes, porcini mushrooms, or green beans sautéed in duck fat with parsley; or cold, cut into strips with a curly salad seasoned with walnut oil.

Our goose confit is prepared according to a traditional recipe from the South-West of France. We use only quality geese, raised in the open air and fed in a natural way to offer our customers a healthy and tasty product.
The goose confit is an emblematic dish of the french gastronomy. It consists of goose legs candied in their own fat, which gives them a tender and melting texture. It can be accompanied by potatoes, green beans, red cabbage or any other seasonal vegetable.
