Ingredients for 4 people:

- 4 barbet mullets

- 1 scoop of celeriac

- 8 cherry tomatoes

- some chanterelles

- 1 leek

Preparation of mullets with lobster oil:

1 / Peel and clean the mullets or have your fishmonger do it. Sprinkle them with spices on fish.

Ingredients for 2 people:

- 10 raw scallops

- 1 pinch of pink berries

- 1 pinch of salt

- 1 lime juice

- 2 good tablespoons of lobster oil

- 2 tbsp chopped chives

Preparation: to be done 1 hour before eating

Chop the scallops into small cubes (or strips) and place them in containers

In a bowl, emulsify all the other ingredients, mix intimately with the scallops and refrigerate.

Ingredients:

- 1 egg yolk

- 1 good tablespoon of Dijon mustard

- Salt and pepper

- 3 tablespoons of lobster oil

- 215 ml of sunflower oil

Preparation :

With an electric mixer, mix the egg yolk and the Dijon mustard.

Season with salt and pepper.

While mixing, add the oils in a trickle, until the mayonnaise is well mounted.

Reserve in the refrigerator.
