The recipe for Mango Passion Tiramisu

A delicate tiramisu recipe subtly enhanced by passion fruit juices and mango juice

Ingredients of the Mango Passion Tiramisu for 4 people:

  • 25 cl of Passion Fruit Nectar 
  • 10 cl of Mango Nectar 
  • 12 spoon biscuits
  • 3 organic eggs
  • 35 g of honey 
  • 50g of powdered sugar
  • 360 g of mascarpone cheese
  • 1 green kiwi, peeled
  • 1 lime for the zest in decoration

Preparation of the Passion Mango Tiramisu

  • Separate the yolks from the egg whites. 
  • Mix the egg yolks with the sugar in a bowl. Whisk with an electric mixer for 6 to 8 minutes, until the mixture whitens and takes on a nice volume. Add the mascarpone and honey, mix until it is very smooth.
  • Turn the whites into snow. When they are very firm, incorporate them little by little (in three times) to the previous mixture with the help of a spatula, to preserve the lightness.
  • To assemble the tiramisu: soak the cookies with a spoon in the passion fruit and mango nectar mixed (slightly lukewarm if your cookies are dry). Place them in the bottom of the dish.
  • Put a generous layer of the cream on top of the soaked cookies. 
  • Cut the kiwi into brunoise and place on the cream.
  • Repeat the operation with a new layer of soaked cookies and another layer of cream.
  • Place in a cool place before tasting. When serving, grate some lime zest to decorate.
