The recipe for the rooster in beer

The Coq à la bière is a typical dish from the North of France, an authentic recipe from the terroir of northern breweries. A dish that is usually eaten in winter.

Ingredients of the rooster in beer for 6 people:

  • 1 rooster of about 2 kg
  • 3 tablespoons of flour
  • 1 Liter of dark beer
  • 20 cl of thick fresh cream
  • 3 shallots
  • 300 g of brown button mushrooms
  • Salt, pepper, 5 juniper berries
  • Thyme, bay leaf 

Preparation of the cock with beer 

  • Cut the rooster into pieces, season with salt and pepper and pass the pieces in the flour
  • In a casserole dish, heat a little oil and fry the pieces of rooster in it. Meanwhile peel and mince the shallots. Wash and mince the mushrooms
  • Once the pieces of rooster are well browned, put them in a dish. Put the shallot and mushrooms in a casserole dish. Fry for 5 minutes.
  • Return the rooster to the casserole with the juniper berries, add the beer. Make sure that the meat is well covered, otherwise add a little water. Add the thyme and bay leaf, and cook gently for at least 2 hours.
  • When the rooster is cooked, if there is still a lot of juice left, remove the rooster and the mushrooms and reduce over high heat. (otherwise proceed to the next step)
  • Add the crème fraiche and cook gently for 5 minutes
  • Arrange the meat in a dish and cover with the sauce

The coq à la bière is traditionally eaten with fries! But it can also be eaten with steamed potatoes, for example.

We can also prepare the beer rooster with chicken, but it will be necessary to reduce the cooking time to about 1 hour.
